– New Year’s resolutions exist for a reason. If your house is anything like mine, there seems to be an endless supply of sweet treats gracing our kitchen counters in December – after all that indulging over the holidays, my belly could use a break. At the beginning of each new year, I like millions of other Americans yearn to clean up my diet. I crave simple fresh, nourishing foods that truly feed me.
 

IMG_9642If I were going to give you one recipe that hits all the marks it would be these Quinoa + Kale Patties. These easy to make, savory cakes are a satisfying meal in themselves. Top them with avocado, cilantro, and garlic oil and you have a healthy feast. In all the recipes I’ve shared over the years, this one is the runaway favorite. I hope it makes you happy too!

 

 

INGREDIENTS adapted from Heidi Swanson’s wonderful book, Super Natural Every Day

  • 1 cup quinoa
  • 2 cups water
  • 4 eggs, whisked
  • 1/3 cup Parmesan cheese
  • 3 spring onions, sliced thin
  • 3 cloves garlic, minced
  • 1/2 teaspoon sea salt
  • 1 cup steamed kale, chopped
  • 1 cup breadcrumbs {GF friends: be sure to use GF breadcrumbs. I always make my own.*}
  • 1 teaspoon olive oil
  • optional toppings: avocado, cilantro, lemon juice, salsa verde, garlic oil
